Halcyon

Probably something like the original IPAs would have been like, this strong ale is brewed with 100% Maris Otter floor malted pale ale malt and heavily hopped with a combination of our favourite hops of the moment. Like it’s name, we prefer to take the best hops that the Summer days have given us to create something unique and special. Careful attention is paid to striking a balance between the characters of the hops that we choose so that we get equal amounts of spiciness and intense hop character as well as lightness and softness of the more fruit based aromas. A full-on bitter finish and full body are key for this beer as is the addition of dry hops in maturation. Anything up to 25 lbs of hops is again added at the conditioning stage of this beer to emulate the true IPAs of yesteryear. It is unpasteurized and unfiltered …no stealing of delicate flavor and aroma molecules.
