Much more complex & fruity than the traditional Berliner Weisse, this historic recipe is rich with a combination of fruitiness and lactic tartness. The wort is not boiled; it is heated up to boiling temperature then transferred to open fermenters and pitched with both yeast and lactic acid bacteria. Delightful!
